The man allegedly barricaded himself, his partner and their three young children inside a Wanniassa home.
Police used a Taser on the man in their attempt to arrest him.
The 28-year-old man faced the ACT Magistrates Court charged with threatening to kill, assault, resisting public officials, possessing cannabis and using an accelerant endangering the safety of others. He was refused bail.
It is alleged the hostage situation unfolded in the early hours of Saturday morning.
Court documents allege the man pulled a sword on his partner and threatened to behead her and one of the children.
It is alleged he then grabbed the woman by the neck and pinned her against the wall.
The woman allegedly escaped his grasp by head butting him.
It is then alleged he threatened to "start killing c-----" while holding a Jerry can and petrol.
Police were called to the home and used specialised equipment to break down the door.
Police described the woman and children as in a terrified state.
They said they found the defendant hiding under a bed.
He resisted arrest and was subsequently both tasered and capsicum sprayed to subdue him.
Magistrate Bernadette Boss said the alleged behaviour was irrational and inexplicable.
After she refused bail, the man turned to his mother in court and said it was "all lies".
He will appear in court again later this month.
