A Go Fund Me page has identified the victim as 52-year-old Rachel Wake, a mother of two, registered nurse and midwife.
Officers responding to reports of a stabbing at a home in Mornington found the woman in a serious condition with upper body injuries. She was taken to Royal Hobart Hospital, where she later died.
A 60-year-old man was on Sunday charged with her murder. Police say they knew each other.
Tributes to Ms Wake remember her as "the kindest soul and most beautiful midwife".
She had two teenage children. More than $27,000 has been raised in 15 hours to help them rebuild their lives.
"Her teenage children have experienced a great trauma and a huge loss," fundraising organiser Hannah Chapman wrote.
Donors include women supported by Ms Wake during the births of their children.
"What a beautiful woman. Midwife at both our babies births and such a ray of sunshine. One of the most caring people you'll meet," one woman wrote.
Colleagues have described the tragedy as heartbreaking.
"My friend & work family for 20 years. Loved & admired as a brilliant midwife & mother. Will be so so missed. We are all so devastated," another woman said.
